True story: I've never actually made a recipe with sauerkraut until now because in all our nearly ten years of my marriage, I just assumed my husband didn't like it. (He's usually not a fan of vinegary dishes.) But I was craving it myself this week and gave this dish a try and to my surprise, he loved it. He said he's had dishes with sauerkraut that he didn't like, but this one was a winner! So it's worth a try for even your most skeptical family members.

Slow Cooker Sauerkraut Pork and Potatoes

makes 4-6 servings
4 red potatoes
1 3-pound pork loin
Salt and pepper
1 teaspoon fennel seeds (optional)
1 2-pound bag sauerkraut
Scrub the potatoes but don't peel them. Cut them into large chunks and place them in the bottom of the slow cooker.
Season the pork loin all over with the salt and pepper and place it on top of the potatoes. Sprinkle the fennel seeds on top and then pour the sauerkraut with all it's juices over the pork.
Cover and cook on low heat for 8 hours or until pork is cooked through and tender.
