Egg salad makes for such a quick and easy lunch, especially if you already have hard-boiled eggs on hand. Here I've served it in half a pita pocket with some veggies on the side, but a lot of times I eat the egg salad with a spoon and just have some extra celery sticks and gluten-free crackers.
You will need: hard-boiled eggs, lightly mashed with a fork; light mayonnaise; finely chopped celery; salt and pepper.
Add the celery into the bowl with the eggs and season with the salt and pepper.
Add the mayonnaise and give it all a good stir.
Now it's ready to be stuffed into a pita pocket, slathered between pieces of bread, or eaten with a spoon. Yum!

makes 2 servings
4 hard-boiled eggs (here are some handy instructions)
1/4 cup light mayonnaise
1-2 stalks celery, finely chopped
salt and pepper
Mash the eggs with a fork in a medium sized bowl. Add the celery and season to taste with salt and pepper. Add the mayonnaise and mix well.
Serve in pita pockets, between slices of toasted bread, or just eat it with a spoon!

I don't have a favorite egg salad recipe, but this one looks great! I don't make it nearly enough. That lunch plate looks so delicious and healthy. :)
