The base recipe is also very flexible. If you don't have flax seed, you can leave it out. You can adjust the amounts of oats and egg whites up or down based on your preferences. I usually add more egg whites on mornings when I've had a longer workout, for example. And with a few changes, this recipe can even become pancakes or baked oatmeal. (I'll share those recipes in future!) (Update: baked version has been posted.)

makes 1 serving
1/3 cup old-fashioned oats
1 T ground flaxseed
2/3 cup water
1/3-1/2 cup egg whites (or equivalent from separated eggs)
1/2 banana, mashed
desired add-ins and toppings
Combine the oats, flaxseed, and water in a small nonstick saucepan. Bring to a boil and let most of the water absorb into the oats. Then add the egg whites and mashed banana (I usually just mash the banana in the measuring cup with the egg whites). Stir to combine and cook, stirring occasionally, until the mixture has thickened and begins to look less shiny.
Serve in a bowl with desired toppings. Suggested add-ins and toppings: fruit-sweetened preserves, nut butters, almond milk, shredded coconut, chopped nuts, fresh or dried fruit, coconut milk, cinnamon, cocoa powder, PB2, chocolate chips, or whatever your heart desires.

- my favorite: fruit-sweetened preserves (I use Smucker's 100% fruit in apricot, peach, strawberry or raspberry), a teaspoon of almond or peanut butter, and unsweetened vanilla almond milk (see bottom picture)
- oatmeal cookie: stir one teaspoon of cinnamon and half a teaspoon of vanilla into the mixture as it cooks, then top with toasted walnuts, raisins, and a drizzle of maple syrup
- pb2 and jelly: stir two tablespoons of plain or chocolate PB2 into the finished mixture and top with strawberry or raspberry preserves
- almond joy: stir half a teaspoon of almond extract into the mixture as it cooks, then top with shredded coconut and mini chocolate chips (see second picture above)
